Viennese cuisine is said to be the only major cooking tradition named not after a country but after a city. Located in the heart of the former Austro-Hungarian empire, Vienna's culinary tradition is a unique conglomerate of dishes from Bohemia, Hungary and the Balkans. These crownland influences have remained to this very day.

Viennese wine taverns

Vienna has always been closely associated with wine, and refreshing beer is likewise a part of Viennese culture.

The congenial wine taverns ("Heuriger") on the city outskirts allow you to experience that special blend of exuberance and melancholy, which is so typical of the Viennese, over a fine glass of Riesling, Weissburgunder or Veltliner. The green sign bearing the classic heuriger glass with handle designates top quality and genuine Viennese wine.

Heuriger vocabulary:

Heuriger: wine of the last harvest and also the word for wine tavern
Ausgesteckt: a bush or wreath over the door signalizes that the new wine is being served
Gemischter Satz: wine of different sorts, fermented together
Sturm: grape must at the start of fermentation
Heurigenkalender: official calendar of permissible serving times. Published in daily newspapers.

International cuisine

It is almost inevitable that a city like Vienna, which has always been so open to international culinary influences, has itself become a nerve center of culinary globalization.

Scores of former Viennese pubs and restaurants have given way to Chinese, Taiwanese and dim sum establishments. International business tourism has also made Japanese food highly popular in the Austrian capital, even if many sushi bars are, in fact, run by Koreans. The influence of Turkish cuisine is also not to be underestimated, as Turkey is a country with which holidaymaking Austrians have developed a special bond.

Holiday memories in particular are what Vienna's Mediterranean cookery scene has capitalized on in recent years. Italian restaurants from posh to pizzeria can be found to suit all pockets and tastes, and Spanish food is also rising in popularity.

Luxury restaurants

Viennese cuisine has been renowned for its luxury ever since the Congress of Vienna (1814-15) spent as much time eating, drinking and being merry, as conducting territorial negotiations after Napoleon's banishment. Today, it is still possible to dine using old silver cutlery and there are still waiters around who serve up meals in sparkling-white gloves. In Vienna, there is more overlap between "lower class" and "upper class" cuisine than in other countries.

Certain standard dishes such as Vienna schnitzel, tender boiled beef, deep fried chicken and stuffed breast of veal are featured on the menus both in simple pubs and at gourmet restaurants. Of course, these dishes are much more sophisticated at the latter - hence the higher prices.

Vienna's luxury restaurant scene is, however, not exclusively geared to things Viennese. There are also a number of international-calibre restaurants where light, gourmet food with a touch of Mediterranean, French or Euro-Asian is served. So if you want to have a grand time out and dine in style, you have a wealth of alternatives.
